Vegan Pancakes

Hey everyone

Hope you are all good. Today I have for you a vegan pancake recipe from Eat Smart by Niomi Smart. They are supper quick, easy, healthy, and taste amazing.


I think they are perfect for breakfast any day of the week because they only take roughly 10 minutes to make. They would be perfect for school, sleepovers and work breakfasts.


What you will need to make 10 pancakes:

  • 3/4 cup rolled oats
  • 1 ripe banana
  • 90ml soy/almond milk
  • 1/2 teaspoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon bicarbonate of soda

Firstly you will need to place into a NutriBullet your rolled oats and blend them into a powder. Then add all of the other ingredients. I used 1 defrosted banana but you could use a fresh one.


Then all you need to do is in a frying pan melt some butter and place the mixture into the pan. let the pancake cook for a while until you flip them as they are a bit fragile. Once they are cooked serve with your favourite topping. I went with frozen blueberries and I personally think that they taste amazing, you could also add banana, maplesyrup or strawberries.

Quinoa Chips

Hope you are all well, today I have for you a quick and simple snack idea, Quinoa Chips. I feel like quinoa has really come into the latest health food trend so I thought it would be the perfect time to try this recipe. The original recipe is from Laura Teodora.

I love that is it supper quick and healthy and is a snack that is home made and still tastes amazing. I feel that when you are feeling a bit peckish it is soo easy to go to the pantry and pull out a box of chips or crackers. This got me thinking about all the unnatural flavouring and unknown ingredients that are hidden inside, So I decided to make my own.

What you will need:

  • ½ grams of quinoa
  • 60 grams of flour
  • 2 Tablespoons of olive oil
  • Flavouring: Salt, paprika, herbs
  • Baking paper

Makes roughly 20 chips

First what you will need to do is cook the Quinoa, the packet should have instructions on it. The Quinoa I used said to simmer ½ cup quinoa to 1 cup water or until the quinoa is well covered. The place on a stove and simmer for about 20 minutes or until the quinoa has soaked up all the water.

Then in a small jug combine all other ingredients and using a stick blender blend until a smooth consistency, I would recommend adding water to make the mixture wetter and a runny like consistency ( in the picture above they are too thick and glugy). Using a spoon place small piles and using the back of the spoon spread into a chip like shape.

Then with you flavouring of choice sprinkle on the top. Then in a preheated oven cook at 180ºC cook for 20 minutes or until hardened and crunchy.

And then you’re done. I feel that this is a super quick, easy and healthy way to snack throughout the day and tastes so good with some dip on the side. August Calendar

Hey everyone

Hope you are all well, another month has flown by which means its time for the August calendar. I have decided to make an iPad/ tablet/ phone friendly format calendar that you can set as your lock screen. You can simply download the pdf and put test over the top with you plans for the month. I thought it would be a great idea as it will save paper and I feel it will keep me more organised. Another option would be to set it as your computer back ground.

Timor Leste

Hey everyone

Today is going to be a bit of a different kind of post. I have been wanting to do a post like this for a while now and have recently come back from a trip to Timor Leste so I thought it would be the perfect time. I would like to share my recent thoughts and would love for you to comment at the end of the post your thoughts as well, as I feel it will be really interesting to hear from you all.


So it all began when I was listening to a talk by Sam Clear, he spoke about his experiences walking around parts of the world for unity. His presentation really opened my eyes as we know that there is hurt and trouble in the world that goes on everyday, but we don’t always see what is being done to stop it. It made me realise that we actually need to do something about it, even if it begins with our own communities. Just by being nicer or helping someone out you are making the world a tiny bit better. I really hope that one day there will be no more wars and I believe that if we all hope for the same thing that one day it will become a reality. I would also recommend if you somehow ever get the opportunity to attend a presentation by Sam Clear go as I found it really inspirational.

Then only recently I came back from a trip to Timor Leste. Whilst I was over there I learnt how easily we can all get caught up in our day to day lives and forget how lucky we are. The Timorese are recovering from many years of devastation rebuilding schools, houses and other infrastructures. I realised how much I have and how fortunate I am to have a life like my own. I live in a country where there is no wars and there has never been a devastating disaster that has ever directly effected my life but these people have.

I realised how lucky I am to have the house that I do and the resources around me. I have a bedroom with a bed, a wardrobe full of clothes, a heater, a fan. I have a kitchen, living room, dining room. I have clean running water that comes from a tap when I turn it on. I have realised that I should appreciate how easy my life is compared to others.

Whilst I was over there I met a girl who said when she was at school she would have to travel 7km in 1 hour so she basically had to run to school. I realised how much I take going to school and getting an education for granted. Not everyone in the world has the same opportunities to get an education as I do yet many children complain about going to school and others who do not have the opportunity’s only wish is to get an education. I visited an orphanage which is where the photo above is form. The girls there, are there because their parents died or are too poor to take care of them. It was devastating to see that parents are so poor that they are unable to provide and care for their own children.

I think the main message that I can take from the trip is that I can make a difference in the world and should appreciate what I have. The trip has made me realise how waste full I am and how much stuff I have, even though I do love going shopping and buying new things. Next time I go shopping I will think twice whether I actually need it and use recyclable bags. I have realised how much waste I make, plastic bags, wrappers, packaging and how it impacts the world, seeing plastic washes up onto their beaches and impact others environments. On the trip I also did not use my phone or any technology for 11 days and it felt amazing, we have the need to always be connected and know what is going on in other peoples lives, but it felt so good to not worry about what other people were doing and to be living in the present.

I have realised the importance of helping others because if we all shared the love and resources around we have the power to change the world.

If we are not the ones who change the world then who will?

Also if you ever get the opportunity like I have or are thinking about going on a charitable or life changing experience I would highly recommend it as it truly was an amazing experience that I will never forget.

Crepe Cake

Hi lovelys

I think we have all seen these crepe cakes online somewhere so I decided to give it a go. I would just like to tell you if you would like to give it a go yourself leave about 4 hours to make it.


What you will need

  • 2 eggs
  • 1 pinch salt
  • 2 tablespoons sugar
  • 2½ cups plain flour roughly
  • 2½ cups milk roughly
  • 1 large block of chocolate

Firstly you will need to make the crepes. In a bowl use a whisk to combine your eggs, salt and sugar. The gradually add your milk and plain flour alternating between the two about ½ – 1 cup at a time, and whisk each part until smooth. Then once you are done the crepe batter should be a thin smooth consistency, I would aim for the consistency of cream.

Next melt your chocolate, I used the microwave on power 50% for about 2 minutes but this will just depend on the power of your microwave. Keep an eye on it as you don’t want it to burn. Alternatively you could do this over a double boiler.


Once your chocolate is melted it is time to begin to cook the crepes. Using a crepe pan and a ladle make one crepe at a time and place it onto a plate layering each with a coat of melted chocolate. I would recommend having something to watch or do whilst doing this as it does take a while for all the crepes to cook.



Then once you have finished making the crepes you could either leave it how it is or using a knife cut around the edge to make it look smoother. Then coat the crepe cake with the remaining melted chocolate and its time to dig in.
