Cake pop Balls

Hey everyone

Hope you are all having a good week. Todays blog post as you can probably tell by the title is cake pop balls. I have decided to make cake pop balls as I find it a bit hard sometimes to make them stay on the sticks, but if you wanted to you always could just pop them onto one.

What you will need:

  • 1 Cooked cake / cake trimmings
  • Chocolate to melt
  • cream cheese
  • Decorations – Sprinkles

Firstly what you will need to do is, with your cake (you could make one, packet mix or buy one) is you will need to break it up into small crumbs. Then add in the cream cheese, just enough so that the mixture comes together and can be rolled into balls. Then place the rolled balls into the refrigerator so that they can go a little firm.

Then either over a double boiler or in the microwave slowly melt your choice of chocolate. If you decide to do it in the microwave ensure that you only place it in there for roughly 30 sec with a power 70% to make sure that the chocolate doesn’t burn. Then using a spoon roll the balls in the melted chocolate  until they are fully coated.

Then is the fun part, decorate them before the chocolate begins to set with your favourite sprinkles or lollies.

Unicorn Cupcakes

Hey everyone

Hope you are all well, today I decided to try and make these super cute unicorn cupcakes that I have seen around the internet everywhere, hope you enjoy.

What you will need:

  • Cooked cupcakes
  • Ready to roll fondant
  • Corn flower
  • Edible gold powder
  • Vodka for the gold powder
  • Black food dye / edible pen
  • Butter cream icing

Firstly what you will need to do is kneed and roll out your fondant. A tip is to use corn flower if the fondant is a little sticky, if you are using already opened fondant and it is too hard and crumbly place it into the microwave for a few seconds at a time on a low power.

Then you will need to make ears, horns and faces for the unicorns. For the faces, roll the fondant and use a circle cutter to cut a circle. Then using black food dye I used a paint brush to paint the eyelashes onto the face of the unicorn.

To make the ears, I rolled the fondant into small balls and then squished and shaped them into a triangular shape. Then for the horn I rolled a long sausage that was thin in the centre and went fat towards the end. Then fold the sausage into half and twist.  Once you have made the components mix the edible gold powder with a tiny drop of vodka, then using a paint brush paint the ears and the horn.

I also placed some of the gold onto the face of the unicorn just because I love gold. Place the faces onto the cupcakes with a small amount of butter cream. Then with some butter cream icing and a small star nozzle, pipe a small pile of icing onto the forehead of the face and then place the horn and ears into the icing. Note that if you are not planning on displaying the cupcakes for a while, assemble them just before as the fondant will go soggy.

Vegan Pancakes

Hey everyone

Hope you are all good. Today I have for you a vegan pancake recipe from Eat Smart by Niomi Smart. They are supper quick, easy, healthy, and taste amazing.

I think they are perfect for breakfast any day of the week because they only take roughly 10 minutes to make. They would be perfect for school, sleepovers and work breakfasts.

What you will need to make 10 pancakes:

  • 3/4 cup rolled oats
  • 1 ripe banana
  • 90ml soy/almond milk
  • 1/2 teaspoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon bicarbonate of soda

Firstly you will need to place into a NutriBullet your rolled oats and blend them into a powder. Then add all of the other ingredients. I used 1 defrosted banana but you could use a fresh one.

Then all you need to do is in a frying pan melt some butter and place the mixture into the pan. let the pancake cook for a while until you flip them as they are a bit fragile. Once they are cooked serve with your favourite topping. I went with frozen blueberries and I personally think that they taste amazing, you could also add banana, maplesyrup or strawberries.

Quinoa Chips

Hey Lovelies,

Hope you are all well, today I have for you a quick and simple snack idea, Quinoa Chips. I feel like quinoa has really come into the latest health food trend so I thought it would be the perfect time to try this recipe. The original recipe is from Laura Teodora.

I love that is it supper quick and healthy and is a snack that is home made and still tastes amazing. I feel that when you are feeling a bit peckish it is soo easy to go to the pantry and pull out a box of chips or crackers. This got me thinking about all the unnatural flavouring and unknown ingredients that are hidden inside, So I decided to make my own.

What you will need:

  • ½ grams of quinoa
  • 60 grams of flour
  • 2 Tablespoons of olive oil
  • Flavouring: Salt, paprika, herbs
  • Baking paper

Makes roughly 20 chips

First what you will need to do is cook the Quinoa, the packet should have instructions on it. The Quinoa I used said to simmer ½ cup quinoa to 1 cup water or until the quinoa is well covered. The place on a stove and simmer for about 20 minutes or until the quinoa has soaked up all the water.

Then in a small jug combine all other ingredients and using a stick blender blend until a smooth consistency, I would recommend adding water to make the mixture wetter and a runny like consistency ( in the picture above they are too thick and glugy). Using a spoon place small piles and using the back of the spoon spread into a chip like shape.

Then with you flavouring of choice sprinkle on the top. Then in a preheated oven cook at 180ºC cook for 20 minutes or until hardened and crunchy.

And then you’re done. I feel that this is a super quick, easy and healthy way to snack throughout the day and tastes so good with some dip on the side. Crepe Cake

Hi lovelys

I think we have all seen these crepe cakes online somewhere so I decided to give it a go. I would just like to tell you if you would like to give it a go yourself leave about 4 hours to make it.

What you will need

  • 2 eggs
  • 1 pinch salt
  • 2 tablespoons sugar
  • 2½ cups plain flour roughly
  • 2½ cups milk roughly
  • 1 large block of chocolate

Firstly you will need to make the crepes. In a bowl use a whisk to combine your eggs, salt and sugar. The gradually add your milk and plain flour alternating between the two about ½ – 1 cup at a time, and whisk each part until smooth. Then once you are done the crepe batter should be a thin smooth consistency, I would aim for the consistency of cream.

Next melt your chocolate, I used the microwave on power 50% for about 2 minutes but this will just depend on the power of your microwave. Keep an eye on it as you don’t want it to burn. Alternatively you could do this over a double boiler.

 

Once your chocolate is melted it is time to begin to cook the crepes. Using a crepe pan and a ladle make one crepe at a time and place it onto a plate layering each with a coat of melted chocolate. I would recommend having something to watch or do whilst doing this as it does take a while for all the crepes to cook.

Then once you have finished making the crepes you could either leave it how it is or using a knife cut around the edge to make it look smoother. Then coat the crepe cake with the remaining melted chocolate and its time to dig in.

Pumpkin and Eggplant Quinoa Salad

Hi Everyone

Hope you are all feeling good. Today I am going to share with you this pumpkin and eggplant quinoa salad. I normally don’t like these kinds of “healthy” salads but I absolutely love this one and I hope you do too.

What you will need:

  • ½ Butternut pumpkin
  • ½ Eggplant
  • 200g fetta
  • 1 cup quinoa
  • oil
  • salt and pepper
  • rocket leaves
  • balsamic salad dressing

Firstly you will need to dice your pumpkin and eggplant into small cubes, then place them on a lined tray and drizzle with oil, salt and pepper. Then place in oven at 210ºc until they are roasted and softened.

While your vegetables are roasting start to make the quinoa, I used 1 cup quinoa to 2 parts water and then placed it into the microwave for 10 minutes or until softened. Then let it cool. Then dice your feta, I used danish feta.

Once your vegetables are roasted (the above picture they are not roasted) in a bowl place in your washed rocket leaves, quinoa, then add in the roasted vegetables and feta and lightly toss.

When your ready to eat it, I dressed it with balsamic salad dressing and it is amazing. I hope you have enjoyed this post and if you remake it I would love to know what you think.

Easter Waffles

Hi Everybody

Its me agains with these delicious and simple Easter Waffles. I thought I would share with you another quick and cute Easter Treat.

One of my favourite things about easter is waking up super early, doing an Easter egg hunt and then once all of the excitement is over relaxing and eating some pancakes, but to change things up these simple EasterBunny Waffles are amazing.

What you will need

  • 567g Plain Flour
  • 2½tsp Baking powder
  • ½tsp Salt
  • 5 tbs Sugar
  • 5 eggs seperated
  • 2½ cups milk
  • 208g Melted butter

Firstly separate your eggs, put the egg whites into one bowl and the yolks into another. Then using an electric mixer whisk egg whites until stiff and then set aside. The bowl with the egg yolks add the plain flour, baking powder, salt, sugar and mix lightly.

Then add the melted butter and milk and using an electric mixer beat into a smooth batter. Then using a spoon fold in the egg whites. Now it is time to place the mixture into your waffle maker and let the magic happen.

To make these waffles special, cut three hearts out if the waffle and then place two into of each other. Then cut the third heart into half for ears and using the left overs of the waffles create whiskers and a nose. Using ice-cream I made a tail and added some to the ears and Nutella and Ice cream for the eyes.  They you can enjoy xx
