Vegan Pancakes

Hey everyone

Hope you are all good. Today I have for you a vegan pancake recipe from Eat Smart by Niomi Smart. They are supper quick, easy, healthy, and taste amazing.

I think they are perfect for breakfast any day of the week because they only take roughly 10 minutes to make. They would be perfect for school, sleepovers and work breakfasts.

What you will need to make 10 pancakes:

  • 3/4 cup rolled oats
  • 1 ripe banana
  • 90ml soy/almond milk
  • 1/2 teaspoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon bicarbonate of soda

Firstly you will need to place into a NutriBullet your rolled oats and blend them into a powder. Then add all of the other ingredients. I used 1 defrosted banana but you could use a fresh one.

Then all you need to do is in a frying pan melt some butter and place the mixture into the pan. let the pancake cook for a while until you flip them as they are a bit fragile. Once they are cooked serve with your favourite topping. I went with frozen blueberries and I personally think that they taste amazing, you could also add banana, maplesyrup or strawberries.
